Fresh Takes asked Chef Nette to come up with a light and tasty Valentine’s Day meal for the health conscious or for those of us planning to take our clothes off shortly after dinner. So to her credit she came up with this surprisingly tasty treat we call: Chef Nette’s Chicken Apple Salad.
Serving size 4-6.
2 1/ 2 Cups diced cooked chicken breast.
3/ 4 Red bell pepper
3/ 4 Minced red onion
2/ 3 Dry basil flakes
1/ 4 Dry parsley
3 Tablespoons Agave nectar
2 Teaspoons lemon juice
1/ 2 Fiji apple
1/ 8 Teaspoon black pepper
1/ 8 Cayanne red pepper
Prep time 15 min
Directions:
Total cook time 30 minutes
Bake chicken for 29 minutes on 350 degrees. Cool and set aside.
Combine in large bowl all of the above ingredients until mixed evenly.
Served best with Lesley Stove Raincoast Crispcracker with crandberry and hazelnut crackers.
